I tried these oatmeal pancakes yesterday and loved how they turned out. They're a great, healthy version of a family favorite. To add a little fruity sweetness, I used blueberry preserves as a topping instead of syrup, and it was absolutely delicious. Also, I added a little more oatmeal than what the recipe called for since I found the batter to be just a bit too liquidy. All in all, these were fantastic and filling. Mere

I made these last night for the first time while trying to plan my menu for Sunday's Oscar party, and they were great. To make them more party-friendly (and less like a quiche), I'd add a bit more Bisquick, a little less vegetable oil, and then broil them for a minute at the end just to add some crispness to the top. They were delicious, though, and super easy.

Fireside Popovers with Brie
Fireside Popovers with Brie
Rating:
I tested these out last night trying to determine what I'd serve on Sunday night during the Oscars. Since I think of Brie as more elegant than most cheeses, it seemed like a perfect appetizer for a red carpet party. And while they were definitely lovely, they could use a little kick. For a savory popover, I'd maybe add a bit more salt and some rosemary to the batter. For a sweet snack, I think the honey glaze suggestion below sounds incredible. And Brie and honey are such a perfect pair. Otherwise, the recipe could not be easier, and if you're like me and only have a 12-cup muffin tin (instead of 24), the popovers were just as good and only slightly larger than bite-size. They just need to bake a minute or so longer.

Buttered Rum-Spiced Cider
Buttered Rum-Spiced Cider

On a snowy, February evening, this was a warm and welcome after-dinner drink. It took no time at all to make and absolutely hit the spot. The only modification I'd make is to use less butter. It made each sip so rich, we could barely finish the glass. So we tried a second glass with a lot less butter, and it was perfect. Sweet, spicy and soothing all at the same time.
