"I made these for some of my friends who challenged me to figure out how to make gluten free tiramisu. I halved the recipe to make 12 cupcakes instead of 24 and also followed the advice of Dsnybst and adding only one STICK of butter (not one cup). I intended on adding coffee extract to the mix, but forgetfulness will get you. Instead, I added 2tsp of the pure coffee extract to the frosting, as well as everything else. I also had a very difficult time finding mascarpone cheese, so I made a substitute: 8oz soft cream cheese 1/2 cup whipping cream 2 1/2 tbsp sour cream The frosting turned out tasting exactly like tiramisu frosting should, so I am very happy about that. However, tiramisu should be much lighter than these cupcakes turned out; they should be more spongy and less dense. Overall, they are extremely tasty. I wish I had added coffee extract to the batter, but they were still tasty. Hopefully we will get a thumbs up from our gluten free friends!"
