"This was a HUGE hit at our 4th of July party and graduation party! I served with pineapple, grapes, and strawberries. I forgot the lime peel, but no one seemed to notice. It is definitely a keeper!"

"Another HUGE hit at our 4th of July party! I made this on a Friday and we had it on Sunday and it was AMAZING. Just had to stir before serving, as it was a bit liquidy, but it was gone within minutes. I didn't do the alcoholic version, but think I may next time. Also, I forgot the lime peel, but no one seemed to notice. Served with strawberries, grapes and pineapple."

"These were a HUGE hit at our 4th of July party! Instead of the strawberry preserves in the middle, I used blueberry preserves to keep with the Red, White, & Blue theme. Otherwise, everything was the same. These reminded me more of a cheesecake than a cupcake, so they're not so over-the-top sweet. Will definitely make again! "

"OMG so good! I'm so glad I checked the reviews before making. I also baked in a 400 degree oven for about 25 minutes, but turned down to warm due to having to pick someone up. By the time I got home, it had been in "warm" oven for about 35 minutes, but was STILL flavorful and juicy -- just a tad overdone, but still yummy! Boyfriend said, "Oh wow, put this one in the book!" :)"
