"Made these for my vegetarian roommate and I last night and they were a hit! The spinach-ricotta filling is really tasty. I'd recommend cooking the pasta until it's a tiny bit past al dente. My noodles were a bit too firm which made fitting them into the cups a tricky. I did have a lot of leftover filling and sauce, so I made a quick pasta bake for the freezer. Two dinners (and leftovers for lunch) from one cooking session...I can't complain about that!"

"A deliciously easy recipe that's destined to be a staple in my slow cooker repertoire. I omitted the onion and added extra carrots and pea pods, but other than that, followed the recipe exactly. Makes a ton, and reheats wonderfully the next day. "

"Made these hearts to give to coworkers this holiday season and they were a hit! Fun to make and folks seemed delighted to receive. The only change I would make next year is replacing the Candiquik with real white chocolate. I'm just not partial to the taste of that stuff and prefer real chocolate. Other than that, I wouldn't alter a thing!"

"Was drawn to the no-roll sugar cookie concept and am so glad I tried this recipe out! They taste to me like the Italian bakery-made cookies from my childhood. Light and soft in the middle with a delicate, sugary finish. I dyed the finishing sugar per the instructions in Betty's Christmas book and was pleased with the resulting colors. I'll be making these again!!"

"Made these for a Christmas party appetizer and they were a hit! Quick to whip up and easy to leave simmering on the stovetop. Will definitely try tripling the recipe in my slow cooker for a party or potluck. They are a classic!!"

Made these for football today and oh my goodbess, they disappeared in a flash! Seriously, it was like I couldn't make them fast enough! I stuck to the recipe mostly, but I did simmer the shredded chicken in homemade taco sauce and skipped the salsa. I love that everyone could pick their own toppings. I will be making these again soon!

Holy smokes is this fudge good. The combo of chocolate fudge, creamy sweet cajeta and salty cashews...how could you possibly resist? It's also deceptively easy to make (not that anyone needs to know that). Perfect for holiday gifting or a decadent dessert tray.

Have you ever been surprised by a recipe in a good way? I definitely was tonight with this dish. It was so easy to make. Brown the beef, chop the veggies and cheese, then mix it all together in the slow cooker. My honey said these reminded him of old-fashioned loose meat sandwiches, like from a diner. A hearty, easy, delicious and cheap dinner I will be making again.

Red Velvet Whoopie Pies

Made these over the weekend for a birthday celebration and was surprised by how quickly they came together! They really were no harder than baking a bar or making a catch of cookies. I also loved how the fresh fruit cut the sweetness of the marshmallow filling. Next time I will use an ice cream or cookie scoop so the pies are more uniform in size. All in all, this is a great red velvet recipe! Impressive, festive and easy.

Microwave Apple Crisp

I was skeptical at first (apple crisp in the microwave?), but this recipe is a winner. I substituted one of the apples out for a pear, but other than that, I stuck with it as written. It was so easy! Next time I might try mixing in a handful of dried cranberries in with the apples; adding some toasted chopped pecans or walnuts to the topping would be good as well. Easy, delicious and oh-so-very quick to make!
