Impossibly Easy Italian Sausage Pie
"Needed to use a pound of Italian Sausage Ground Turkey and didn't have pasta or tomato sauce. This recipe hit the spot. Browned turkey, microwaved bag of italian veges; sprinkled cheese then added parm. cheese to the topping (basil, oregano, garlic salt). Yummy and no trip to SaveMart for pasta that would have turned into $20!"

Carrot-Oat Muffins
"I had shredded carrots that needed to be used so I adapted this recipe to what I had on hand. Regular 2% milk, crushed pineapple instead of raisins; next time I'll add more than 1/2 cup of pineapple. You will have more than enough mix for 12 muffins. No problem to make a little cake with the rest. My 8 year old ate it up."

Strawberry Nut Bread
"One of the things I love about this site is being able to search for a recipe by ingredients you already have. I wanted to use a bag of mixed berries and found this recipe easy to adapt. I thawed, drained and mashed the mixed berries; cut the recipe in half and now have a loaf of bread that tastes like the best fruit cobbler ever! Thank you!"

Raspberry-White Chocolate Muffins
Rating:
I used a 1/3 cup less of milk and added a 6 oz Harvest Peach Light yogurt; traded dried cherries for the berries and left out the white chocolate chips. I love this website because other bakers post how they adapt the recipes and it gives me confidence I can too. These are the best muffins I've ever made, light and very tasty. The best part, using what I have instead of deciding not to bake because I was missing one item. Thanks to everyone that posts their ideas. I can't wait for the kids to wake up and see homemade muffins on a school day!
