Butter Pecan Cake with Apricots
First time to make this and had confidence that it would turn out well enough to bring to a potluck bbq. I used canned peaches, but didn't have peach preserves so used apricot jam (warmed up for easy spreading) instead. For frosting, I made fresh whipped cream (spread after layer of jam has cooled). I kept it refrigerated until the last minute. There was a bowl of cut fresh fruit next to my cake at the bbq and people started topping their cake with the fruit. It was delicious.
