Easy Chicken and Garden Veggies
"Another good easy recipe. Didn't get the fresh tomatoes so used a can of diced tomatoes well drained. It was an adequate substitute but will make sure that I have the fresh tomatoes tonight when I make it again. You can add more veggies, I'll use another color pepper and add mushrooms. Used the Newman's Own Balsamic Vinaigrette and it was really quite good. "

Feta-Topped Chicken
"Very easy to make and very fast. Tasty with Newman's Own Balsamic Vinaigrette and just some oregano and freshly ground black pepper over it. Didn't brush the vinaigrette on, I soaked the chicken in it for just a few minutes before putting it in the broiler. I think there was more on the chicken than if I just brushed it on and it was worth it, be generous with the vinaigrette! The cheese really does make the flavor complete so don't omit or substitute it. Exactly the times suggested: 5 minutes each side, 3 minutes with the tomato and feta. The little one loved it as well. "

"Great recipe. Add more chicken though, at least 1/2 pound more, there is enough marinade and you can also add a little more lemon juice and olive oil. Skew your chicken and your vegetables seperately otherwise your veggies are burned by the time your chicken is cooked. Once you have skewed the chicken then toss the veggies in the leftover marinade and that is more than enough to give them a light coating. Tastes fantastic served over brown rice with a nice salad on the side. Easy, fast, terrific."

Tilapia with Cucumber Salad
"This dish was so easy. Of course flouring and breading is a messy job, that's why you keep one hand clean, only use one hand in the egg wash, flour, crumbs, etc... I think that this is a great summer recipe. The cucumber and red pepper salad is really quite refreshing. I found that the cooking time on the fish was a little longer than specified, but you always know to check and that these times vary with different cooking surfaces. Will definately make again and again. And as far as the lemon-pepper blend, maybe that users was too old, mine smells like lemon and pepper!!!"

Spinach and Chicken Skillet
"We really loved this dish. I wish I had read the reviews prior to making it as I forgot to add the recipes seasoning at the end, let alone maybe adding some of my own! So, yes, mine was a bit bland because of my ommission but we still liked it enough to put in our favorites. Next time, will remember to add seasoning and I am sure that it will be that much better than before. I'll also add more spinach. The chicken was so moist cooked this way. I thought that the posting that mentioned adding some cornstarch was worth trying as I found a little too much liquid was left even though I cooked it longer than directed in the recipe. I was just going to add less milk next time, but the cornstarch is a good way of taking care of that."

Chicken Marsala

Another new favorite. Good advice to up the quantity on the marsala wine. So much lighter than other recipes that use a lot of butter. Smelled great while cooking and tasted even better. Served it with brown and wild rice and roasted asparagus.

Lemony Fish over Vegetables and Rice

Easy one skillet meal. Tasty enough, next time I'll try adding the onions/garlic, etc. as one user suggested. I actually used more fish--only a pound for 4 servings? I guess you are supposed to fill up on the rice. It's basically what I call a "cupboard" meal---Nothing from scratch but boxed, prepared ingredients but good nonetheless. Very simple and quick. Tasty for being made out of already prepared ingredients and the 4 year old loved it too.

Rib Roast with Herb Rub

My new Christmas roast. Super easy, awesome flavor. Cooked it to 152 degrees and it was a nice medium rare all over. Unfortunately, forgot to serve the horseradish sauce with it. You really must try this recipe.

Savory Beef Stew

Great, easy recipe. Used 1 can diced tomatoes and 1 small can tomato sauce instead of the can of stewed tomatoes because I didn't have them. I'll do the same when I make this recipe. It was so good!

Savory Beef Stew

I have to update my previous review. This time I made it with nearly 3 pounds of stew meat and it really was terrific. My 4 year old had also asked for larger chunks of beef so I kept them on the larger side. They also like to pick throught the potatoes so I always have mostly potatoes left over, but that is just our preference. Otherwise, I wouldn't change a thing. I use diced tomatoes and a can of tomatoe sauce, so maybe that is why I have never experienced it to be runny. I don't know. I also season it with my favorite seasonings--oregano, parsley and I love thyme. It is so easy and wonderful!
