Crab or Tuna Mini Cakes
Excellent! I made this with tuna for dinner. It was just enough for my husband and I. It made two cakes for each of us. I also served it with a Mustard Dill Sauce...(I halved the recipe)
3 tablespoons Dijon mustard
2 tablespoons lemon juice
2 tablespoons minced fresh dill or 2 teaspoons dried dill
1 -2 tablespoon sugar
salt and pepper
1/2 cup olive oil or 1/2 cup vegetable oil
and it paired with it perfectly!
These are light, crispy, fresh and perfect for summer. I will be making these again!
