Sweet Potato Puffs
I'm going to make this dish for Easter. It sounds wonderful. We eat lots of sweet potatoes all year long. One of my favorite dinners is ham or smoked porkchops with either baked sweet potatoes or mashed, and topped with creamy country gravy...delicious!! Baked with butter & brown sugar or maple syrup ain't bad either!!

Sausage and Egg Breakfast Pizza
I have been making breakfast pizza's for a long time, I like to make up a little country gravy for the base "sauce" and add the eggs and prepared meat of choice, I have used ham, sausage links, ground chorizo drained well, and crumbled sausage. I've also used prepared pre-cooked bacon crumbled over all. I sometimes use chopped hard cooked eggs instead of scrambled. I haven't used the mushrooms yet, but that sounds great. I go a little easy on the cheese and usually use 2% cheeses. Sliced olives and sliced green onions sprinkled ofer it is good too. My husband likes it any way I make it! So versatile!

Do-Ahead Breakfast Bake
For those of you who are lactose intolerant, have you ever tried using soy cheese and plain soy milk? The cheese melts great, and the "milk" doesn't have a bad taste. I use it often when mmy cousin comes over to dinner, as she's severely lactose intolerant. She also uses soy sour cream, and it's not so bad, although a little bland. Soy dairy products are found in the health food refrigerated section in your supermarket. It works well in this recipe.

Pepperoni Breakfast Pizza
I've been making breakfast pizza's for years, using pre-baked shells, and am so happy to see that i can make a crust from my Heart Smart Bisquick. I use it exclusively for all my Bisquick recipes, and have never had a problem using it. As for the breakfast pizza's, I have always made country gravy, either from a mix or from scratch. Such a versatile recipe! If you want you can use your fave egg sub, and low fat cheese. Sometimes I sprinkle the top with chives, olives, and/or green onions. You can also make them with fruit, using sweetened lowfat cream cheese, thinly sliced peaches, plums, pineapple. When it's done, brush the top with melted apple jelly or apricot jam...YUMMM....healthy too!

Impossibly Easy BLT Pie
This recipe is very easy to make healthier, I use heart smart bisquick, low fat milk, 2% cheese, like Alpine Lace, and when I feel like pushing the envelope, I'll use my fave egg substitute, and pre-cooked bacon. My husband loves this and the cheeseburger pie, to which I add 2 Tb each ketchup and yellow mustard...the best!

Impossibly Easy Cheeseburger Pie
My husband loves this so much, he usually eats half the pie by himself and takes the leftovers in his lunch the next day! When I make the pie, I always add a couple tablespoons each of ketchup and yellow mustard. Sometimes I serve it topped with shredded lettuce and tomatoes and yes....hamburger dill slices! This is also one of my favorite dinners, and it's so quick and easy to make. A real winner!!
