"Delicious! I use half a can of coconut milk (almost a cup) and freeze the other half for the next time I make this. Sometimes I use broth, water if I don't have it, and it's almost as good. Goes beautifully with the slow cooker thai chicken dish on this site and with lots of other dishes, too. My 3 year old loves it, too. Don't worry if you don't have the lime peel or onions... it's still good and you can garnish or season with something to tie it to your main dish."

"Yummy, light, balanced meal with nice crunch and color. I added a half teaspoon of thyme to the dressing for extra flavor, but it was good before that, too. Next time I will add a couple cups of spinach shreds or chiffonade."

"Yummy! I didn't make the frosting, but made the cake with whole grain "white" flour and substituted applesauce for half the butter (I do that a lot when I bake) and it was really good! Makes nice muffins for breakfast, and is pretty healthy with half the fat and the whole grain flour. "

"This is easy and delicious, and it's a perfect use for thighs. I use half of a 20 ounce pkg of chicken and all the sauce in a small crock pot with only one setting (high) and it takes about 4 hours. I save the lime and ginger until the last half hour or hour, so the flavor isn't all cooked out. Perfect for me, my husband, and toddler (I use part salsa part tomato sauce for her) with a serving for lunch later. No, it's not like anything from a Thai restaurant, but it has flavors typical of Thai cuisine. When my husband takes the leftovers to work for lunch, everyone that smells it wants to know who has it and what it is!"

Not bad, but I won't make it again. If you love beanie weinies, this is a nice variation, especially if you pick a variety of canned baked beans that you love. I found it monotonous, since the texture of the potatoes and beans are to similar.
