"For a quick chicken and dumplings, this recipe can't be beat. I've been cooking for over 50 years, and have made this recipe ever since Bisquick first came out with it. My husband loves it. It never goes wrong, either. Myself, I prefer the rolled dumplings, but they take a little more time to make."

"I think this would make a great base for a buffy chile relleno. Instead of pouring all of the batter into the pan, just put half, and then a layer of green chilies and jack cheese before topping with the remaining batter. "

Classic Bisquick® Peach Cobbler
Rating:
This is a "go-to" recipe for me when I need a quick dessert, and it's all right there in my pantry. I, too, do not use all the sugar--the peaches are pretty sweet in themselves; I also use cinnamon, nutmeg and a little allspice. This always tastes as if I've "slaved" over a hot oven, but it's pretty simple. We refer it as "idiot's delight" around here.

An easy batter. It can be taken up a notch by adding more seasonings--I like to use Old Bay and some cayenne. I use this for large shrimp, and we love it.

Boiled Shrimp

This is an easy dish for busy summer days. You can "boil" the shrimp ahead of time and keep in refrigerated. You could even purchase shrimp already cooked and defrost and drain well. I have been making a version of the cocktail sauce for many years--my only change is that I add lemon juice and use hot horshradish (you may not need the hot sauce if you do this).
