I like to cook but lately all I have time for are quick meals. I am glad that we have so many quick and easy recipes now.I have used bisquick for years and love the pot pie,pancakes, bisquits etc.

Hearty Chicken Pot Pie
"I love this recipe, it is easy and tastes so good. I use either fresh veggies or a large can of veg-all or two of the smaller cans of veg-all. When I use the cans of veg-all I sometimes use brocolli pre-cooked with it. My husband and my children love this too. I have made it with cream of mushroom and I have used cream of chicken. Makes a great meal in one or add a salad. Yummy"

Baked Ziti with Fire Roasted Tomatoes
"wonderful dish. My husband is not a big fan of pasta, but he loved this one. It is also great with Italian sausage for the meat. Another option is to cut up eggplant put salt on it and then after a few minutes wash the excess salt off and batter with some flour brown and add to the dish before baking. This is wonderful too."

Better-Than-Almost-Anything Cake
"This is a wonderful cake, we all love it. I have a similiar recipe for a cake that is made with white cake mix, when it is done poke holes and pour the sweetened condensed milk over the cake and put cool whip over this and then coconut. This one is great for all too and everytime that I have made it it has ll been eaten and everyone loved it. I guess this weould be great with lots of differant combinations of cake and toppings."

Roasted Red Pepper and Artichoke Dip
"This is such a quick and great tasting appetizer. Wonderful to have on a night with friends or family over for dinner or to eat while watching your favorite movie or sport. The peppers add a yummy taste and we all love artichokes too. I have another recipe with artichokes, mayo and parmesian cheese mixed and then baked and for a small kick add some chili peppers. We love to eat it with tortilla chips. For a lot of color on the table use a red, green and yellow bell pepper and add some strips of all of the colors of bell peppers and some other veggies ie celery sticks for dipping. My family eats this all up. "

"I try to make these for gifts every Christmas. I sometimes make them with pecans or walnuts and for a special treat black walnuts. I have a very slightly differant recipe. Mine uses all brown sugar, evaporated milk, cream of tartar and leaves the syrup out. I have added cinnamon, dark brown sugar, mixed light and dark brown sugar. My family loves all of these versions. This is one of my favorite treats. It is a must to use a candy thermometer. The cream of tartar helps them to set and when I make mine I bring them to the temp and then let sit for a few minutes until it goes down around 20' and then put in vanilla flavoring and nuts stir and start dropping on wax paper before they harden."
