Basil- and Crabmeat-Topped Cucumbers
I have this mix chilling in the fridge as we speak to bring to Mother's Day gathering tomorrow. All I can say is YUM. I love the blend of the basil and lemon with the red onion-and the mix looks exactly like this picture! I used neufchatel cheese to cut down on the fat a little. Worked great. I'll assemble tomorrow. Probably best to let this blend flavors for a few hrs. Great recipe! I'll make it again and again.

Chocolate Lover's Dream Cake
Made this for my husband's birthday and it was excellent. I actually used fewer choc. chips in it and still, wonderful. I made it without the topping (just the cake) and it was terrific even without the topping. While it did not rise as much as I would have liked, it was dense, moist and delicious. I made the choc. milk with whole milk and Hershey's syrup. I also realized too late I had reduced fat sour cream--it worked with that too! This is a keeper and I can't wait to make it again. Great because you have most of this stuff in the pantry and fridge at all times!

Slow-Cooker Peach Cobbler
Oh wow, made this today. I had about 3 fresh white peaches and also a small bag of frozen peaches, so used both of these. I sprinkled a good amt. of cinnamon over the peaches too. You can definitely cut down on the sugar in this, my peaches were plenty sweet and next time I'd half both sugar amts. I don't buy whole milk, I used that rich variety skim milk and it worked fine. Incidentally, I turned the crockpot to high the last hour of cooking. This is a pretty forgiving recipe and I will make it many, many times. I topped it with freshly whipped "real" cream. Husband lapped it up. Terrific and a keeper.

Ultimate "24-Carat" Cake
This turned out pretty well, except I think it could have had shorter baking time. Pans were 8" and I cooked for about 35 mins. Next time I think I will add more oil to the mix and cut the time down a tad. It was moist, but not as moist as it should have been. I cooled it completely. It looked beautiful, but I found it basically fell apart when I cut it. Not sure why, but next time, I'll add more oil. (Even drier cakes never crumbled on me before.) Flavor was wonderful, topped with a nice thick cream cheese frosting. You could not tell this was a box cake, truly.
