"My family loved this. I put a mixture of greens/Spinach underneath and added a bit extra BBQ sauce (to the plate of each that wanted it) for a little more flavor. I also made double the recipe for a family of 4 (all had seconds and were very happy the extra was there). We also had some left over for lunch the next day. In other words if you are making this for one night and don't want leftovers you don't need to double this filling meal. I prob used more chicken then it called for. I always do. I hope this helped. I am about to make this again right now. "

"This is one of my family's all time favorites!!!!!!! I use sour cream instead of Greek yogurt because I couldn't find it the first time I made it and we absolutely loved it with the sour cream. Eventually I will try it with the yogurt and let you know how I liked it. I make this every chance I get and it is a hit EVERY time. I have to omit the red pepper when my brother is here but when he isn't here we use sweet red peppers. Delicious both ways. Sooo easy and doesn't take very long to make either. Tastes like it simmered all day long. YUMMY!!!!"

"My family loves this! I have passed the recipe around and haven't had or heard a complaint. I use chuck usually but sometimes we use round eye round roast because it is less fatty. I prefer apricot preserves to the peach (I have tried it both ways). This recipe does not cut like the picture shows, however it shreds beautifully. I also add more BBQ sauce than it calls for after I shred the meat to make sure the flavors are bold. Someone made a comment about their meat shrinking....I use a 3 lb chuck roast and feed a family of 5 (I am talking about people who like to eat) and still have leftovers usually. I have also tried a couple of different BBQ sauces and love it with all! Very Yummy and super easy!"
