Healthified Creamy Chicken Enchiladas
Just made this tonight and it was pretty good. I shredded my own chicken breast since I don't like can chicken breasts too much. I added a fresh diced jalapeno and another type of spicy pepper I had and I guess I got dud's for peppers, because it wasn't spicy. I did like the sauce since I added those peppers though. I followed the rest of the recipe pretty exact. I recommend adding more sauce to the chicken mixture since I thought the 1/2 cup wasn't enough. Overall, this wasn't a bad recipe and I would make it again, but with just the ingredients listed, it is kind of bland. I added fresh diced tomatoes when they came out, more jalapenos, and hot sauce...that it was made it tastey. You don't notice the cheese or sour cream are reduced fat, which is a plus!

Creamy Meatballs and Potatoes
I am thinking about making this except for adding fresh potatoes since I have so many and fresh broccoli since I have that too. Also, making my own meatballs and adding that instead of frozen. I will have to look for that soup, I don't remember seeing it, but I think a pack of Lipton Recipe Secrets (beefy onion or onion) might work too. I will try to report back how it turns out!

Pumpkin-Spice Bars with Cream Cheese Frosting
Just made this tonight and wow, it was good! First time making it and I only changed the spices. I didn't want to pay over $10 for all the spices separately, so I just used pumpkin pie spice and I already had the cinnamon, so I added the amounts in the recipe. I would say it is a cake, but none the less delicious. I barely used 3 cups of powdered sugar for the frosting and it came out sweet and more than enough frosting for the 'bars'. I would highly recommend if you are looking for an easy dessert to take somewhere.

Impossibly Easy Taco Pie
I got this recipe from my mom and I have been making slight variations from the original recipe. If you cook it a bit longer than the time suggested, the top crust will get a little crunchier even with the cheese on top. I don't add the cheese until it is done baking and then just melt the cheese for a minute or two in the oven so no soggy top. Also, slicing up a tomato and putting it on top before adding the cheese. Mixing in pinto beans (mashed via a food processor) to the meat mixture is good too. I also make it with skim milk and the heart smart bisquick and it tastes the same. If you like a crunchier bottom crust, you can take taco shells and break them apart and lay them down in the greased pie plate and it kind of creates more of a pie. Hope this helps!
