"This salad is very easy to make and is perfect for summer weather. I used a cup of halved grape tomatoes in place of stuffing tomatoes. The colors are gorgeous and the taste is so fresh and light. Be sure to use fresh parsley to really brighten the flavors."

"This dessert is outstanding. One thing I'd recommend is not adding the chocolate chunks to the brownie base. They are overpowering and make the torte difficult to cut. The chunks are so big and the pecans/toffee bits get lost because of them. I think the mousse would go better with a plain brownie base."

Slow Cooker Country French Beef Stew
"I liked this stew, but felt the bacon was pointless in the slow cooker. It lost its flavor and I couldn't taste it in the finished stew. The red wine brought such a nice flavor to the dish and the sun-dried tomatoes were a delicious addition. I ate it over noodles and brown rice and it was great with both."

"I made a strawberry version of this cake and it's such a perfect summer dessert. Very refreshing and the whipped topping makes it lighter than other cakes. For my strawberry version, I used a strawberry cake mix instead of the white. Delicious!"

I liked this stew, but felt the bacon was pointless in the slow cooker. It lost its flavor and I couldn't taste it in the finished stew. The red wine brought such a nice flavor to the dish and the sun-dried tomatoes were a delicious addition. I ate it over noodles and brown rice and it was great with both.

Savory Focaccia Sandwiches

I made this sandwich as part of a picnic lunch for some friends several years ago and we still talk about it to this day. It does take some planning to get the spread ready but it's well worth it. There used to be sun-dried tomato cream cheese you could purchase, but I can't find it anymore. It was so good. I'm glad to have this recipe for homemade. It goes so well with the roast beef and focaccia!

Southwest Mac and Cheese

It's so cheesy. I loved this dish. Sometimes macaroni can get boring, but with the southwest flavors and the corn, this was a hit. It was surprisingly filling, too.

Herbed Chicken and Broccoli Quiche

Absolutely fabulous! This quiche is so light and flavorful. At around 400 calories a slice, it's not too shabby for the figure either. This quiche is perfect for a light lunch and very portable for you brown-baggers.

Creamy Asparagus-Chicken Bow-Ties

Oh baby! Seriously, I never wanted this meal to end and I'm paying for it now. I am so stuffed because I simply could not quit eating! I'm still reminiscing about that first bite. The sauce is so creamy and then you get a nice crunch from the asparagus. Don't like asparagus? You could easily substitute broccoli. The chive & onion flavored cream cheese is the wow factor! Such a subtle taste of onion makes all the difference. I will definitely make this one again and would be good enough to serve to company.

Chipotle Red Beans and Rice Casserole

Loved it, loved it, loved it! I have recently discovered how much I love adobo sauce. It's like the spicy sister of regular barbecue sauce. Just a small amount brings such a nice taste to a dish. This recipe includes one chipotle chili and it packs some heat! I like to top off my serving with some cool sour cream to balance out the heat. The original recipe calls for topping the casserole with chile cheese corn chips. I left those out to save some calories, but I'd be curious to see what they add to the dish. Although I imagine they would get soggy for the leftovers. A definite thumbs up for this easy meal!
