This is a fantastic recipe. I am always looking for ways to lighten things up, without sacrificing taste. It tastes much lighter than ground beef based recipes, but it has a lot of flavor. The entire family loved this meatloaf. Note: I did not chop the zucchini as finely as the recipe called for but it turned out just beautifully.

This is a wonderful dessert for kids and adupts alike. Pumpkin is fairly subtle and sweet. It is a perfect pumpkin dessert choice for those who do not favor pumpkin pie.
