Green Chile Corn Pudding
"I have made this several times in the last 6 mo. For a potluck at work, for a family get together & for another potluck at work. All 3 times it was made differently. We didn't have any cornmeal, so I used a hush puppy mix that had cajun seasoning it. It changed flavor to a subtle spicy kick that was really good. The 2nd time I couldn't find this recipe so I googled it & ended up w/a sweet tasting version of corn pudding. People at work liked it, it tasted weird I thought. The last time we made it, we didn't use the hush puppy mix, so it was a bit blander than the zippy version I made the first time, but still good. This is my new favorite side dish recipe (using the hush puppy mix to kick it up a notch)!"

Triple Berry Cookie Crumble
"I used Splenda instead of sugar and a frozen berry mix but it was just as good. Will make it again although next time will probably omit the sugar; it was overkill on the sweet side. Weight Watchers has a similar recipe that takes 3 ingredients; yellow cake mix sprinkled over frozen berries and a can of lemon lime soda poured over the top."

S'mores Brownies
"Delicious combination. Definitely serve warm when the marshmallows are gooey, otherwise it tastes like a brownie mix, graham crackers, marshmallows & semi sweet chocolate chips."

Warm Toasted Marshmallow S'mores Bars
"Jeez, thought I was going senile at 46! I was checking the BC website for the s'more brownie recipe to reread how the top layers went while I was waiting for the brownie base to finish baking. This sugar cookie recipe is what came up in my search - I didn't even realize it wasn't the right one. The only difference between the 2 recipes is the base!"

I goofed & grabbed semi sweet chocolate chips instead of milk chocolate chips when I was getting my ingredients. Looking at the picture, I just realized that I also put the chocolate chips on the top of the marshmallows instead of underneath them. Ooops! But at least next time I make them I'll know how much chocolate chips to use. Was really good regardless!

Chocolate Chip Cookie Dough Brownies
Rating:
I first tried these with a peanut butter cookie mix - yum. Next I tried this recipe with the choc chip cookie mix. Not so good. Blah, needs frosting or something. I'm going back to making this with the peanut butter cookie mix, much much tastier!!

Chocolate Chip Cookie Dough Brownies
Rating:
Tried this with the peanut butter cookie mix - minus the icing. Took it to a work potluck & everyone liked them & asked for the recipe. It was sweet enough without the icing. I used a brownie mix that was on sale & not the kind with the chocolate syrup. It was still good. Think the next time I make this I'd use a double chocolate chocolate chip cookie mix to make it extra chocolate-ly. I didn't read the directions closely enough & followed the recipe on the brownie box, so I think they were a little bit moister than they should have been, but still great!

Frozen Cranberry Margaritas
Rating:
I didn't have 24 hours available to get them to freeze in time so I put it in 5 plastic containers in the freezer. They all froze solid, so I think that was a mistake. Had to create the slush by a fast thaw which was a hassle. Subtle cranberry flavor. The lime was a predominant flavor & made me think of a regular margarita. Would be good for a hot summer afternoon. Made these for New Year's Eve, but we also made Mojito's which were the real hit of the party.

Lemon Curd Cheesecake
Rating:
Loved this cheesecake!!! So lemony, sweet & tart. I've made it several times for potlucks, and everyone loved it. I also had problems making the crust go up the sides. My solution was to double the crust recipe to make it go up the sides, but it still didn't go all the way to the top of the cheesecake. I sprinkled powdered sugar on the top, looked really nice.
