Butter Pecan Cake with Apricots
We L-O-V-E this cake! I suggest chilling the apricot preserves before spreading them on the cake. It keeps the frosting from getting "smeared" with the preserves...they remain in two layers better. Also, I prefer to store this cake in the refridgerator. To me, it tastes better chilled.
