Pasta and Bean Skillet
I made this last night...or I should say, it basically made itself!! This is the absolute easiest meal I've ever made in my life. Not a single knife was used! I'm a vegetarian and my husband is not and we both loved it. I added extra chili powder and cayenne pepper. I have no idea how this would serve 4 people. We split this in two instead of four servings and it was the perfect serving size, and we're definitely not gluttonous! We served with a side of cucumber tomato salad with rice wine vinegar to cool down the heat. I'll make this any night of the week. Delish!

Cheese- and Vegetable-Stuffed Shells
I made this last night and it was very good! I only gave it 4 out of 5 spoons because the prep time and amount of dirty dishes it created was a bit more than I prefer, but overall it was a very tasty dish that my husband and I both devoured! The only adjustment I made was using fat free ricotta and reduced fat mozzarella, which helped this dish stay in the "healthy / diet friendly" category. I used a large zucchini and the amount of filling stuffed 16 shells perfectly. I'd definitely make this again...especially for company!! I used an orange bell pepper, which gave the dish lots of color.

Spicy Black Beans and Rice
I cannot believe how easy and fantastic this dish is!! We've made it twice this week. We actually halve the recipe though just for the two of us. I have NO idea how you would get 12 servings out of the original recipe...and we are very health conscious eaters. I didn't change a single thing, although as we were eating it tonight a light bulb went off and I decided that next time I make this I'll add some fresh diced mango. :) I'm a vegetarian, but my fiance added some shredded chicken to his and couldn't stop raving about it.

Chick Pea and Tomato Curry
I just made this tonight for dinner. It was amazing. I doubled the amounts of curry, ginger, and garlic and some cumin and crushed red pepper to kick up the heat. I added a can of diced potatoes as suggested in other reviews and it really made it hearty. It reminds me of the chana masala from our local indian restaurant, only not quite as oily or thick. I am a vegetarian and my fiance is an omnivore and we both LOVED this recipe.

Impossibly Easy Chicken Pot Pie
It's true....this couldn't be any easier! I followed the instructions but used vegetarian chick'n and cream of celery and it came out perfect! My boyfriend, a non-vegetarian who never over-eats, ate 4 out of 6 servings!! So evidently he really liked it. I added seasoning also...I think it would have been pretty bland without some salt, pepper, and thyme. I will be making this regularly!

I made the vegetarian version of this using soy crumbles instead of ground beef and my boyfriend (who isn't a vegetarian) and I love it! He's Italian and says that it reminds him of the stuffed peppers his grandmother used to make when he was growing up. I've made it 3 times since trying it the first time 2 months ago and this is what we're having tonight too! So easy and delicious. My only objection though is that when I follow this recipe I only end up with enough filling for 4 peppers. Maybe my peppers are too big....but otherwise it's perfect!!!
