Layered Chile-Chicken Enchilada Casserole
Yum! My husband and I enjoy spicy food, so to kick up this dish a knotch, I substituted shredded Pepper Jack cheese for Colby/Monterey Jack cheese, and a can of drained Rotel tomatoes for the green chiles. Also added a teaspoon of cumin and a teaspoon of chili powder when I cooked the chicken. This extra spice gave this recipe the umph it needed.
