Impossibly Easy Mini Chicken Pot Pies
"This is a nice recipe especially for serving a group of children or perhaps ladies for lunch. As it is written, I did not have enough Bisquik mix to spread a thin layer on the bottom of the muffin tin AND completely cover all twelve mini pot pies as a topping. I only covered six, but leaving the other six uncovered still resulted okay. They were just not as high as those topped with the dough. My other tweak would involve some sort of sauce in the chicken filling mixture. Using the chicken broth was not enough to create the true creamy flavor of a pot pie. I am wondering if an ingredient was missing from this recipe. All in all, the work involved was worth the effort."

Slow Cooker Make-Ahead Sausage and Mushroom Scrambled Eggs
"This egg dish is very good. It can be prepared on the stovetop....exclusively. Am I alone in feeling that a slow cooker should be our friend in making a meal easy and FAST? The precooking of anything prior to putting it into a slow cooker is one step that I avoid whenever I consider a slow cooked recipe."

Texas Coleslaw
"A great version of coleslaw. I used a mixture of extra virgin olive oil and basil infused EVOO instead of ordinary vegetable oil....I also included 2 TBS. of red wine vinegar to add a little punch and it definitely did the trick. A popular request from friends and family."

"Nice salad alternative. We get tired of lettuce and caprese salads. Didn't have jicama, probably won't go out of my way to buy it....any suggestions for a substitution other than the water chestnuts the I used? They worked just fine."

Corn and Crab Quesadillas
"An odd combination of flavors for us. Ate a couple triangles and actually tossed the rest. Used real crabmeat so it was an expensive experiment. Maybe the corn was a turnoff...or the combination of corn and crab. Something just wasn't right."

Creamy Orange Ice Cream Pie
Rating:
Help...what did I do wrong!? The amount of sherbet and ice cream overflowed my pie plate. It was messy, but the pie that resulted after the cleanup ordeal was very good. I need to try it again after decreasing both of the ingredients by at least one cup. I did use the pie plate size that the recipe suggested.
