Slow Cooker Fajita Pulled Pork Sandwiches with Avocado-Onion Slaw This recipe is delicious but the real star of the show is the avocado-onion slaw. That was one of the most delicious toppings we've ever eaten. I will make it over and over again for other dishes, especially when making a shredded pork to put into tortillas. As for the pork part of the recipe, it was very tasty, but there are better pulled pork recipes out there for sure. No matter what, you have to try the avocado-onion slaw.

Fiesta Enchilada Bake We just tried this recipe last night. It was delicious! I used ground beef instead (we are not fans of ground turkey), omitted the green onions (sprinkled some onion powder on the beef instead), and used mild enchilada sauce. This was easy to make and it is so attractive coming out of the oven, which is hard to see from the picture included with the recipe because of the toppings. My husband absolutely raved about it. We had sour cream to put on top and next time, I'd like to have jalapenos around for a topping as well.
