Minestrone Pasta Salad My family loves this easy to make pasta salad! My 12 yr old is finally eating protein packed beans and all the vegetables and there is no better way to mix it all together than with this salad! My five yr old has always loved the green pepper and beans. The actual pasta is her downfall. We love it as a nutritious lunch or a cool, light dinner during the summer months (I rinse the pasta to cool it off). Personally, this easy salad can''t be beat!
