Impossibly Easy Coconut Pie
Can't decide how I feel about it yet. Hubby says it's too eggy but it doesn't bother me. The part that I found strange was that all my coconut separated and rose to the top of the pie. I have a nice custard bottom with about an inch of coconut on top. My guess is it's because I used 1 cup of very finely shredded with 1 cup of regular. I suggest only using regular coconut because the fine stuff rises to the top. I think it's tasty but if you don't like eggs, custards or bread puddings, don't bother.
