Red Harvest Quinoa
"Nice quinoa recipe. Different with apples and cranberries in it. I made it with a 50-50 mix of red and white quinoa. I also doubled the apples, celery, cranberries, and parmesan. Used pepitas instead of pine nuts, because that is what I had on had. Yummy!"

Raspberry Ribbon Slices
"I've made these before and people really liked them---these disappeared before the other type I had made. Thinking of making them for the 4th of July but instead of one "well" for preserves, I'll make two wells. I'll fill one with strawberry and the other with blueberry for a red, white, and blue look. And maybe a very light/sparse sprinkle of silver star-shaped glitter on top of the wet glaze drizzle..."

Pink Bunny Cupcakes
"I made a double batch of these to take into work for the Friday before Easter. Took a very long time to make/decorate. Couldn't find all of the ingredients so I made the following substitutions: 1.) instead of pink and white M&Ms I used red and white gumdrops cut in half; 2.) instead of mini chocolate chips for eyes I used blue and green round discs/sprinkles; 3.) instead of red hearts/sprinkles I used white hearts and stuck the point straight into the frosting right under the nose so it looked like two bunny buck teeth; 4.) instead of strawberry cake mix and frosting I used cherry chip mix and made a cherry buttercream frosting from scratch. So overall, a lot of work, but I received TONS of compliments on them. Lots of people took pictures to send to friends. So a nice, one-time only effort for me."

Royal Blue Velvet Cake
"Smurf Cake! It is so funny to see this recipe. For over twenty years my family has made a from-scratch Smurf Cake (Waldorf Red Velvet Cake made with copious amounts of liquid blue food color instead of the usual red). Always a family favorite that disappears fast. Our from scratch frosting recipe is really cool. Only frosting I've ever found that uses flour in it. Odd, but truly tasty. Seeing this recipe brought back memories and made me smile. Thanks! :)"

Dark Chocolate Apricot Cookies
"People rave about these cookies whenever I make them. A permanent addition to the Christmas cookie baskets I give as gifts to friends and co-workers. I increase the orange extract to a full teaspoon and increase the apricots to 1 1/2 cups. I find cutting up the apricots with kitchen scissors is much easier than chopping with a knife. Just dip the scissor blades in water occassionally so the apricots don't stick."

Chinese Five Spice Almond Cookies
Rating:
You can purchse Chinese Five Spice (and just about any other spice or herb) from Penzeys. Pezeys is an AMAZING spice store. They have some stores across the country but also a huge online and catalog buisiness. Check out: www.Penzeys.com. These cookies came out wonderful! Nice and different.

Gluten Free Peanut Butter Cookie Cups
Rating:
I was looking for a gluten-free recipe because one of the people I planned to give holiday baked goods to. Found this recipe and made it. Very easy to make! He loved them and even asked for the recipe! I included these in the holiday cookie baskets I made for everyone, too. No one could tell that they were "different" (i.e. - gluten-free). Thank you!
