Impossibly Easy Zucchini Pie
I added about a 1/2 c. crumbled cooked breakfast sausage and used grated swiss cheese instead of parmesian. Next time I'll grate the zucchini and finely chop the onion. The onion didn't cook throughly because I chopped it to big. I'll make this again. It's a delicious way to use zucchini.

Slow-Cooker Peach Cobbler
I had all the ingredients, and started to put this together, when I realized that the bag of frozen peaches was only 3 c. I needed 4 c. of fruit, so I found a pkg of frozed bing cherries in the freezer. I added the cherries to the peaches, and WOW--What a great combination. This was YUMMY.

Slow-Cooker Green Chile-Chicken Enchilada Casserole
The ingredients looked mouth watering. I made his according to the directions, and was dissappointed at how bland it tasted. If I make it again I will definately spice it up a bit. Maybe use jalapeno/jack cheese and replace one of the cans of green chile's for one can of chopped jalapeno's. (Skip the added fat of the mayo).

Sausage Cheese Balls
The first time I made these I made them too large. The balls are better if they are a little smaller than a ping pong ball. I used hot (spicy)sausage and topped with a jalapeno/pineapple salsa sauce. These were great for our New Years buffet. I agree that the dough is thick, so you have to use your hands and form the balls with your hands. DIG IN !
