Grilled Taco-Spiced Chicken
This chicken was DELISH!!! Was soo easy to make in a short amount of time and had SO much flavor! I, too, was skeptical about the odd combo of ingredients, but everything came together beautifully and the chicken was so moist! Definitely will make again :)

Impossibly Easy Cheeseburger Pie
I made this last night for my husband, my sister, and her husband. It was A HIT!! I doctored it up a bit, which made for a PERFECT cheeseburger taste. While browning the meat and onions, I added fresh ground pepper, Adobo, Grillmates hamburger seasoning, and garlic powder. Because there is salt in the Abobo and the Grillmates seasoning, I did not add extra salt. After draining the browned meat and onion mixture, I added a few squirts of ketchup and a squirt of mustard and mixed it all up. I then added a handful of cheddar cheese to the meat prior to putting it in the pie plate. After putting the meat into the pie plate and topping it with cheese, I added about a cup (maybe a little less) of chopping pickles on top, then added the bisquick mixture. The pickles were a perfect addition for that perfect burger taste, and they actually stayed crunchy after being baked! Will definitely make again!

Easy Chicken-Pasta Primavera
What a delicious, quick and easy meal this was! I did need to add MUCH more dressing because the pasta would have been dry with the amount the recipe called for. Also added MUCH more fresh basil (mmmmmmm), more parm cheese, and used penne instead. It turned out great, and the recipe is pretty simple to remember so the second time I made it I didnt even need to refer to the recipe! YUM!

Spinach-Stuffed Chicken Breasts
I've been looking for a good stuffed chicken breast recipe for a LONG time, and when I found this one I knew this was it! This was DELICIOUS! This was definitely more time consuming for me (WAY more than the 55 minutes it estimates as "total time"), but well worth it. I actually used chopped up broccoli florets instead of spinach and it was amazing. The bacon added such a nice smokey flavor to this meal. I served this over couscous and it was a perfect meal. My boyfriend usually goes for seconds but I made sure to stuff his chicken breast with extra filling and he was full after his first plate! Will definitely make again :)

Classic Beef Stroganoff
I absolutely LOVE this recipe. Tonight was the second night I made it and I tweaked it a little bit this time. I used fat-free sour cream to make it a little healthier, and it was perfect! Tasted exactly the same! Also, I added a little bit more flour so the sauce wouldnt be so thin, and a few extra shakes of worcestershire sauce for some more flavor. This recipe definitely needs more meat though, next time I will use 2lbs.. and contrary to other reviews, I thought the amount of sour cream is perfect and makes the sauce so nice and creamy-- not overbearing at all! (and since it's fat-free, there's no guilt in using all that sour cream either!) Can't wait to make it again :)
