Healthified Beef Stroganoff
"This dish was delicious! I only used 2/3 cup sour cream though as upon a taste test, I felt it didn't need the full 1 cup. Next time I'll put in the mushrooms to cook with the meat and broth instead of adding them towards the end since I would like them a bit more soft. My entire family enjoyed this meal. Great recipe! "

Mexican Pasta Skillet
"Because some of the reviews said this dish was a little bland, I added a tablespoon of taco seasoning and 1/4 cup water to the cooked meat and let it thicken before adding the other ingredients. I also used ground turkey and because I was out of tomato sauce, I used tomato juice. I also used canned corn instead of frozen and medium salsa. This dish was fantastic! I don't know how it would have tasted if I made it exactly according to directions but my way, with a dollop of sour cream mixed in, was yummy! "

Roasted Tilapia and Vegetables
"This was absolutely delicious! Next time I will cook the vegetables for 10-15 minutes before putting in the fish and letting them cook the rest of the way as I like my vegetables a bit softer. My kids loved the fish but I couldn't get them to touch the vegetables. Next time I'll try it with different veggies and see if that works. "

Healthified Skillet Lasagna
"Very yummy! My noodles would not cook fully in the allotted time though. I had to cook it an extra 15 minutes to get them to stop being so chewy. It may be because I couldn't find the mini lasagna noodles and instead used farfalle noodles instead. Very easy dish to make and my kids loved it. We will definitely make it again. Plenty of leftovers too. "

Cheesy Vegetable Risotto
"It's so good. My husband said it had a funny taste but I think that's because he doesn't like the cheese sauce in the vegetables. I added boiled chicken and some mozzarella cheese to ours. I will make it again and hubby will get used to it I hope. "

The soup was good and it's easy to make. My family are meat eaters and couldn't stand no meat so I added some ground turkey. It made it that much better.

I liked the soup but it wasn't as good as I thought it sounded like it was going to be. I will make it again, only I think I'll leave out the thyme. Some people are fans of it but I obviously am not one of them.

Very good meal. I added garlic after giving it a taste and finding it a little bland. I decided next time that I make it, I'm going to add regular onions as well as the green onions. Still very good and cheap to make.

Healthified Chicken Tortilla Casserole
Rating:
My kids scarfed this up and begged for more. It was so good. We're not big bell pepper people but we thoroughly enjoyed this meal. Next time we'll use only 1/2 a cup of bell pepper and a little more cheese and chicken. We also substituted the fresh tomato and canned chilies with a can of mild rotel tomatoes and chilies. I thought about leaving out the milk based on reviews that it made it too soggy but am glad that I didn't because it was just right. It was soft but not soggy. Will definitely make this again!
