Gluten Free Blueberry Corn Muffins I love this recipe, although when I make it I use unrefined virgin coconut oil instead of butter, this way it's also dairy-free. I also make it as a cake and cook it at 350 for about 30 minutes instead. I omit the granulated sugar and instead, after baking, dust it with powdered sugar. It's really great this way.
