"Very Good Indeed! Firstly, to get that "fruit-filled" effect you probably should fill the cup half way, add preserve then top with batter. Tried it as the recipe suggests and was left with a puddle of blackberry preserve at the top. Also didn't have milk on hand so I used a mixture of evaporated milk and water and the muffins came out really soft!!! Good recipe!!!"

"Just tried this recipe and was pleasantly suprised! I added lump crab meat, onions and sweet peppers (instead of the chile) and it was VERY tasty. I live in the Bahamas and conch fritters are very popular, these fritters are a good alternative! For the sauce I used a mixture of mayonaise, a bit of ketchup and mustard tradionally used with conch fritters)"
