Quinoa and Vegetable Salad (Gluten-Free)
this was good, healthy and colorful. Make it a day ahead as it tastes better the second day. I substituted kidney for garbanzo beans and 1 can of diced green chilies for the red bell pepper. Also used Trader Joe's roasted frozen corn instead of canned. I seasoned with black pepper and left out the olives since I don't care for them.

Baked Butternut Squash with Apples
Very good! It does not taste "like a vegetable"! I made half a batch since it's just 2 of us. I used packaged butternut squash for convenience. The cubes are smaller than called for, so it baked faster. I added a bit more cinnamon and used sugar free maple syrup. The last 5 minutes of baking I put the pecans in a flat cake pan and toasted them along side of the casserole. My husband really liked it! It's full of nutrition, too.

Dutch Pear Pie
REALLY good! This pie tastes good and looks good. The pieces retain their shape on the plate so it looks just like the picture; not sloppy. It has almost a custard quality. Next time I will try adding a little cinnamon to the filling.
another reviewer had trouble with making the crumb topping. I put the stick of butter (right out of the fridge), brown sugar and flour in my electric mixer and it did fine.

I took this to my brother's house when his in-laws from Mexico were visiting. They raved about it! I love it because I am not a "frosting" person and this really stands alone with just whipped cream.

I'm going to try these, but I wonder why cream of tartar isn't included in the ingredients as it is in the Bettey Crocker cookbook version of "from scratch" snickerdoodles.
