Parmesan Pork Medallions
This sounds very similar to the way I make my homemade chicken nuggets except I don't use bread crumbs. I use bisquick. I never thought of using pork pieces. Will definately try this and post a review! :-)

Strawberry Nut Bread
This was extremely moist. Made 2 changes - used 3/4 unsweetened applesauce + 1/2 cup canola oil to replace the 1 1/4 cup veg. oil. I used 2 cups of fresh diced strawberries instead of frozen. I'd be curious to know how much the fat content was reduced. How about it Betty Crocker? Can you calculate that & let us all know??
I used the Wilton Aluminum Mini Loaf pan and had 15 mini loaves per batch. The baking time was about 18-20 min & fit my schedule better. Plus I can freeze them easier. My college aged teen is taking an entire batch back to the dorm with her!

Blueberry Best Coffee Cake
I'm not fan of cake in general. However, this is good, tastes just like a coffecake should. For the drizzle I used powdered sugar, melted butter and whole milk. I used a glass 9x9 baking dish so mine was peaked in the middle with a crispy edge. The sweetness of the cake is going to be based on the sweetness of the berries. I used frozen berries, rinsed & drained.

Apple Streusel Cheesecake Bars
Good flavor even though I forgot the cinnamon. I used sugar free applie pie filling. The bottom crust should be thicker. Next time I'll use 1 cup of the cookie/butter crumbles on the top and put the other 1/2 cup in the crust. I'll probably increase the butter to 2/3 cup too. I cut up the apples while they were still in the can. My teen said I should be left home alone more often if this is what I'm going to do while she's gone! LOL!

Bread Machine Pumpkin Spice Quick Bread
Excellent flavor, dense and fragrant. I added 1 teaspoon of baking soda in addition to the 2 teaspoons of baking powder it called for. Everyone likes it. However, I will not make it in the bread machine again. It took too long. I have a Regal Kitchen Pro machine, it's about 15-16 years old, works great but the "quick bread" cycle is 2 hours long! I could have popped it in the mini-loaf pans and had bread 15 minutes later.

Quick-Mix Chocolate Cookies
Excellent, quick, and so tasty. Next time I will try them with powdered sugar instead of granulated. I think I will prefer the smoother texture more. We wrapped them idividually in the little cookie bags & taped them shut. That keeps germ-y fingers off them while kids choose just the right cookie! I found the cookie bag in the Wilton baking supplies at a craft store. Anyone know how well they freeze, if at all?
