Mexican Beef and Bean Casserole
I used some beef base to help season the ground beef along with fresh ground pepper and a minced schallot. I also added a drained can of mexi style corn and mixed all this together and topped with home made corn bread batter and topped that with a shreaded cup of pepper jack cheese ,then baked it 25 minutes or until the corn bread browns nicely.Take out of oven and let cool slightly and serve with sour cream and fresh guacamole and chopped green onions.

Hawaiian Banana Bread
I like this recipe. I never use margarine,there is to much water added and it never gives the food a rich enough flavor.Home made butter is my personnel choice.I also bake my bananas in the oven first ,in their skins, until the skins turn dark!I take them out and cool them ,then peel and use them.I also use 1/2 teaspoon banana extract. They have a much more "INTENSE", flavor.Then I follow the rest of the recipe and serve with home made butter.Fresh ground "PURE KONA COFFEE",not the KONA coffee that has been blended.I use fresh cane sugar and fresh heavy cream in the coffee.WOW!!!You can do it just use moderation.

Piña Colada Upside-Down Cake
Good recipe. I used freshly shreaded coconut meat,made my own coconut milk and used a light olive oil.I also used fresh pineapple. If you use extra virgin olive oil the taste changes,be wary.I used regular butter. I don't always use unsalted butter. Sometimes the salted butter adds a better dimention to the recipe.I topped the finished cake with homemade whipped cream that I had added freshly minced and drained pinapple . This Betty Crocker community is very informative.I have apreciated all of the reviews for my cooking. Each comment and each recipe I view as a great learning tool.

Favorite Potato Salad
This is a great recipe. It is a basic recipe that allows extras to be added if so desired. I made it a while back with adding 1 can water chestnuts, sliced,then I juliened them and ,added 8 thinly sliced radishes that I juliened. I added 1/2 cup diced sweet red pepper and 1/2 cup diced green pepper,1/2 cup diced celery,added 1/2 teaspoon celery seeds,4 sliced green onions, 1/3 cup "FINELY" chopped WHITE ONION,1/2 teaspoon dried dill along with 2 tablespoons finely chopped fresh dill,1/2 cup diced homemade dill pickles,8 hard boiled eggs chopped.dressing-- mayonaise, sour cream,dill pickle juice,1 tablespoon sugar 1 tablespoon rice wine vinegar,yellow mustard,salt and fresh ground pepper to taste. Some times I add 2 cans drained ,MEDIUM SHRIMP, at the very last,then carefuly FOLD them into the potaoe mixture.You can then add a fresh squeeze of lemon juice.Top with HUNGARIAN PAPRIKA,tomatoe rosettes and small fresh celery leaves

Enjoyed this recipe the first time around and then made it the second time and used French vanilla whipped toppping . I then decided to add another layer so I made as directed then spread fresh raseberry jam on the white chocolate topping, then I used chocolate fudge pudding mixed with more French vanilla topping on the top of the raseberrry jam. Then chilled again and topped with real whipped cream,shaved white and dark chocolate and fresh raseberries.Remember to keep it chilled.I did not freeze this desert. I made it early in the day and allowed it to completely chill thru.I later served it with raseberry champagne
