Rhubarb Cheesecake Bars
"These bars were a huge hit for both my family and at a potluck lunch! Everyone enjoyed them immensely. I took the advice from some of the other reviewers and doubled the amount of rhubarb (4cups). With using 4 cups of rhubarb, it made for a nice balance of cheesecake and rhubarb flavor. I highly recommend this modification."

"I''ve taken these bars to a lot of parties and every time I get asked for the recipe. The bars are delicious!! I use 2 oz. of baking chocolate for the topping, as I found that the amount called for didn''t cover the whole pan."
