I love to take comfort food recipes and make them a little healthier. I got some great Zucchini at the farm market and decided to give this recipe a try. I subbed the sugar for Sucralose brown sugar blend. I also subbed half of the flour with whole wheat flour. I was out of ground cloves so I used ginger and I was out of baking powder, so I used the amount of baking soda that was called for and then added about a tsp of vinegar to activate it a little. This bread turned out AMAZING. Soooo moist and just the right amount of sweet. It was so easy to "health" up a little and my whole family enjoyed it!
