Luscious Lemon Squares
We ate them, but they''re not the best we''ve had. The flavor was OK, thanks to the additional lemon juice I put in as well as a lemon glaze on top. The crust was weird: good, buttery flavor but too flaky. So flaky, it was crumbly. Oh, and these were VERY hard to get out of the pan. They stuck to the side and that crumbly crust didn''t hold up well. Like I said, we''ll eat them, but I won''t be making these again.

Christmas Tree Brownies
These are fabulous and more important, easy! I thought the box of brownie mix would make the trees too thick, so I used the packet of brownie mix. The trees are the perfect thickness. But the icing...waaay too much. I made only half a recipe and still threw out half of it. In my opinion, brownies are rich enough and cannot tolerate much more. The thin layer of icing on mine is perfect. By the way, my family loves these and thinks they''re beautiful!

Salsa Chicken Fiesta (lighter recipe)
FABULOUS! My super-finicky 6-yr-old only ate about half of his, but ignore his opinion because this is an excellent dish. I used about 1/2 a pound of ground beef and added about 1/4 cup of corn to the beef & salsa and it was wonderful! Since my cheese supply was about 1/2 of what was needed, I put it on top after the baking was done. Still it was delicious. Oh, and I used a round pan, so it really looked more like a pizza. My brain is going crazy with all the ideas I have for this dish. Mexican, Italian, American, different vegetables... This will be something we have every week since I can do a variety of tastes. Note to first-timers: I thought the batter would be thick like biscuits - it''s quite runny like pancakes.

Impossibly Easy Breakfast Bake (Crowd Size)
This truly was ''impossibly easy''. And absolutely delicious! I halved the ingredients (except used 3 eggs instead of 2) and baked it in a 9-inch round pan. It rose up nice & fluffy and the flavor was fabulous with just a few of my own additions. This is an EXCELLENT base recipe. I''m thinking bacon and cheddar, Mexican, zuchini and Provolone and ham, etc... My only changes would be a little less meat (personal preference) and about five fewer minutes in the oven. One other thing: it needs to "rest" after you take it out of the oven for five, maybe ten minutes. Then it cuts and serves perfectly. A KEEPER FOR SURE!
