"Although my husband typically doesn't like quiche-like or frittata-like dishes, he LOVED the impossible seafood pie. I used what I had - chopped fresh red bell pepper instead of pimientos (much more flavor), added a tsp.+ of crushed garlic, used "garden vegetable" cream cheese, used extra green onions. (A little chopped celery would be a good addition too.) I added some Mrs. Dash seasoning did use nutmeg and was able to taste it in the final product and liked it a lot. At the fish counter, I bought 3 oz. of the small shrimp and 4 oz. of imitation crab. I wouldn't usually use the artificial crab, but they were out of fresh and frozen. It worked out fine, blending well with the other flavors and textures. I found that layering the ingredients into the pie pan was easier than trying to "mix" them, then poured the liquid over. Not only was it delicious - and not at all bland - it was also very colorful. While this was cooking in the oven, I prepared the ingredients for the Quick Fruit Cobbler using cherry pie filling and added fresh cut peaches, cooking it while we ate our seafood pie. Also a big winner! In the 1960's, Mom often made Bisquick "impossible pies" which we loved, but I haven't prepared one in 30 years and last night I made two! "
