Cheesecake Pancakes
"I made these and found that if you grate the cream cheese with the large greate and make the pancakes right away, it works fine. Towards the last two, the cream cheese started to break apart and didn't have the consistency the others had, but the flavor is wonderful. We also sprinkled some mini chocolate chips on top right after pouring in the pan and the kids couldn't get enough. What better than strawberries, cream cheese and chocolate? "

"This is an awsome coffee cake. My family likes more glaze on top so I increased the powdered sugar and added more egg nog and a little cinnamon. Make this and you won't be disappointed."

"I've made these several times and always have requests for them again. I use three layers of Phyllo sheets brushed with butter and bake them vs. pre-made cups. Just crush them with your hands when cooled and sprinkle on top of bar. Soooo good! One of BC's best recipes!"

Russian Tea Cakes
"These are wonderful any time of the year, but especially good during the holidays. Easy to make. I've prepared the dough into balls, put them on a cookie sheet and froze until hard. Then put the balls in a zip lock bag (squeeze out the air) and keep in the freezer until you're ready to bake! Leave on a cookie sheet at room temp for a few minutes before baking. WONDERFUL!!"

I made these and found that if you grate the cream cheese with the large greate and make the pancakes right away, it works fine. I really liked the fresh flavors but didn't like the yogurt! It would be much better with 1/2 pkg. cream cheese and mashed berries folded with cool whip. Even a layer of pudding would also help.

So fast and easy! Everyone loves them. I make some with mini-chocolate chips and some plain. A little grated nutmeg over the top for presentation adds a festive flavor!

Rating:
The cake is so moist and delicious but hard to stack and slice with the filling. I tried it again in a 9" x 13" pan and served as a single layer with topping. It was excellent!
