Spicy Chicken Tortilla Soup
I made this for a weeknight dinner for 2 of us and it was pretty easy and quick with good flavor. The whole recipe would serve 6, not 5. I sort of halved the recipe. I used 1 can of the starter with 1 cup of water, the full amount of spices (and could have used more), 2 cups of chopped chicken (1 1/2 would have been enough), 1/2 can of black beans (a whole can would be better). I used a cheddar/jack cheese mix, small avocado, sour cream and no cilantro which would have been a great addition.
