"A very easy dish. I used real chicken and sauted it with chili powder and a little bit of salsa. It definitely added more kick. I also added in a little bit extra salsa and cheese, since my family loves both. "

Beef and Bean Taco Casserole
"Great dish. I loved it and so did my household. I used turkey instead of beef. I mixed all the chopped veggies in with the meat and bean before putting it into the dish. I was trying to hide the veggies so my non-veggie eater wouldn't know. And it worked! Absolutely great. It could also be good as a dip and just take the bottom layer of chips out. "

Chicken Fajita Casserole
Rating:
It was pretty good. My family really enjoyed while I did not so much. I think it was the fajita mix I used. Next time I think I will try using a taco mix and not cook the chicken plain. I used fresh chicken instead of the frozen strips. I also used fresh bell pepper and onions. I cooked the tortillas lightly on a pan to make them a little stiff so they wouldn't turn soggy. My family loves cheese so I added cheese through out the layers with beans and chicken. I definitely will try this again.

French Cinnamon Muffins

Instead of coating the muffins after they were cooked, I sprinkled the cinnamon sugar mix before putting them into the oven. I really enjoyed them. They really reminded me of coffee cake.

Streusel-Topped Blueberry Muffins

Absolutely great!! I did not use the streusel topping because a relative visiting can not have cinnamon. Still great! I also got one of the picky eating cousins to eat them! One of the only fruits they will eat is pomegranate, so I made a second batch of pomegranate muffins and they were amazing also! This is a keeper!!

Chicken Fettuccine Casserole

Great dish! When first looking at the recipe I thought it was going to be very difficult. I was wrong! Real easy dish. My family thought it could have used more seasoning, since I picked out the wrong tomatoes. I have a bacon lover so I added an extra few slices. A keeper!
