Banana Splits with Fruit Salsa
"Very good! This was a hit with 4 out of 5 people in my family. The fruit salsa was really pretty and this is quite a healthy desert with all the fruit and low fat frozen yogurt. And...the ingredients blended together with a little OJ make a nice smoothie (with whipped cream and sprinkles on top if you so desire!)"

Slow Cooker Tamale Pie
"This was ok. I followed the recipe exactly. The cornbread (Betty Crocker) did cook up nicely...for cornbread. It did not, however, get soaked with the sauce like the recipe said. Also, I think this could have used a little more meat/bean mixture and a little more enchilada sauce. It''s nice that you can tailor the recipe to suit your ''spicy'' taste. You could choose mild or hot enchilada sauce, adjust the amount of chilis added to the cornbread mix, and even add ground red pepper, hot sauce, etc. to the meat/bean mix."

Pasta and Grilled Vegetable Salad
"This was really good. It was raining out so I stir fried my veggies but it worked just fine. I think the combination of asparagus, onions, carrots, artichokes, etc. was quite tasty. You could probably also throw in some black or green olives or capers. I made my own balsamic vinaigarette and used tri-color spiral pasta. We had this with pork roast and corn on the cob."

"This was ok. All the ingredients seemed right but something was missing and I couldn''t quite figure it out. Perhaps the vegetables needed to be simmered longer than the 5 minutes stated in the recipe. Hot enough, a little too sour, and missing something important."

Soba Noodles with Ginger Sauce
"This was edible but the sauce really had way too much lemon juice. I would either leave it out entirely or just add a teaspoon next time. I think this could be a tasty and versatile lunch, side item for dinner, or a meal in itself depending on ingredients. Good lunch for kids and for moms who are tired of eating mac n cheese!"

Stir-Fried Bok Choy with Tofu

Yum! I have been trying to incorporate more soy and less meat into our diet. My husband and I loved this recipe and I will be making it again. Very quick and easy. I did not have shallots, so I substituted with 6 green onion bulbs sliced thin. Worked nicely. Absolutely delicious. Tasted like what you''d get in a restaurant.
