Gluten-Free Ultimate Cut Out Cookies
These cookies are delicious! I used coconut oil for the shortening, as I avoid hydrogenated fats. One change I would recommend is to use parchment paper instead of greasing the pan. The cookies are very fragile and even with the grease (also coconut oil) the cookies stuck to the pan and lost almost 25% because they crumbled on removal. But when I switched to parchment paper on the second batch, I didn't lose a single cookie.
