This was silly easy to make and was fabulous!! Will definitely do again, and can easily be tweaked with peas, shrimp, mushrooms, roasted red peppers, whatever you may have in the pantry.

Easy Poblano and Corn Casserole
I've made this several times and have made minor changes. Not really crazy about Poblano peppers, I used them the first time but the 2nd time I used a 4oz can of jalapeno peppers, made all the difference in the world, gives it a very nice kick without being too hot. Also use corn tottillas instead since they're a healthier option being lower in fat and sodium.

Slow-Cooker Mexican Fire Roasted Tomato-Chicken Soup
I followed the recipe exactly the first time, turned out great. BUT, the second time I used 2 12 oz cans chicken breast instead, cut the cooking time to 30 minutes and omit the salt. Perfect. I have doubled the chili powder to spice it up some.
