Bread Machine Crusty Sourdough Bread
I have been trying for YEARS to make a great sourdough bread and this is absolutely IT! I did cheat a little and mix in some Oregon Trail Sourdough Starter (www.carlsfriends.net) that I had bubbling for two and a half days. I didn't have time to wait a week. The combination made an extra-sour starter with a taste similar to my favorite San Francisco sourdough. I mix the dough in my mixer first and then put it in the bread maker as it seems to make a better looking loaf. It will be a little damp for dough--if you put in more flour it will bake up too dense. I also let it sit in the breadmaker pan for about a half hour for a good rise. You will NOT be disappointed with this recipe.
