Being from Louisiana, I'd suggest a different jambalaya. I usually "doctor up" a mix like Zatterains New Orleans style. It is awesome but a little spicy so you may want to not use 100% of the seasoning mix. I sautee onion, celery, bell pepper and garlic first. I sautee the chicken and brown the sliced sausage and I have to say I only like Manda's pork sausage. I mix up the sauteed stuff and then add the packet stuff. YUM! I also have used Oak Grove Smokehouse jambalaya mix and sometimes double the recipe by using one Zatterains and one Oak Grove Mix (or I blend both mixes together and use 1/2 at a time (with one pond of sausage and usually 3 -4 chicken breasts!)
