Healthified Macaroni and Cheese
This macaroni and cheese has gotten a few negative reviews but I beg to differ. I made it for my boyfriend paired with green beans garnished with almonds. I didn't have any flour on hand so I used the Bisquick Heartsmart mix instead to avoid going to the store. I also substituted the Cayenne for Chili powder. To the milk mixture I added a tablespoon of Philly cream cheese after I had heated up the milk to thicken the sauce. To add a bit of mac crust I I sprinkled with some extra cheese and panko breadcrumbs (a good amount, about 1/3 cup) before putting into the oven. My boyfriend and I thought it turned out awesome- nice and crusty top if you like that in your mac. I will be making this again.

Tortellini with Fresh Vegetables
I thought this dish was super quick and easy, and it felt pretty healthy and nutritious. I did think it was a little bland and could have used a sauce. I added fresh garlic and green onions, but still it needed something else...? Maybe next time I'll add some cheese or a can of chopped tomatoes in sauce. Overall yummy and quick!

Mexican Lime-Cream Corn
I made this corn with the Santa Fe Foldovers, as a side dish. It was a last minute thought so I had to improvise, but it was still really good. I didn't have the whipping cream, so I used 2 tbsp of philly cream cheese, I also didn't have flour so I used panko breadcrumbs, I also didn't have the cheese called for so I used the same mexican blend as I put in the Santa Fe Foldovers, and finally, I didn't have any lime so I substituted half of a lemon. Basically.. I didn't have any of the ingredients, but it still turned out great!! I did use a bit extra cumin and I added chili powder for a kick. I let it simmer for about 15 - 20 minutes, stirring constantly. My boyfriend thought the corn was the best part of the meal.
