Cherry Limeade Poke Cake
"I didn't have a lime, so I put about two teaspoons of lime juice into the batter. I also food-processed half a jar of marachino cherries which I put into the frosting along with a teaspoon of lime. It wasn't too limey at all! You can also put the diced cherries into the cake batter for some texture. Next time I will try to frost it with the whipped topping as the frosting is a bit sweet."

Cranberry-Apple Dessert
"My family LOVED this dessert. Since there are only 5 of us, I halved the recipe. It did overbrown a bit before it was finished so I took it out and the center wasn't quite done. Next time I will cook it the full 50 minutes, but put foil over it once it starts browning. This is a great recipe because you can keep the ingredients in the pantry and pull them out for last-minute company!"

Bacon and Egg Savory Cupcakes
"What a mess! The only change I made was to use pre-cooked bacon bits which I pressed down into the biscuits. When I went to crack the eggs, they overflowed all over the top of my cupcake tin and all over the counter. They were just "Large" eggs too. Not sure how I am going to get them out of the tins!"

Chipotle Pork Chili
"This is a fantastic recipe. My family loved it and I ate three bowls! The ingredients are so healthy, I didn't even feel guilty. I didn't have diced tomatoes with green chilis, so I just used diced tomatoes with garlic and onion. I am glad, because there was plenty of spice with the one chipotle pepper. If you don't want so much heat, I would cut the recipe to 1/2 a chipotle..then it will have a lot of flavor but not be so spicy. I served this with a warm corn bread and it made a quick and fabulous meal!"

Chocolate Snowballs
"I made these for a dinner party and was so pround of the work I put into them. Even though the sugar cookie mix was easy, it wasn't easy to wrap 60 kisses. Unfortunately, no one ate them. For whatever reason, they weren't appealing to the guests. I used powdered sugar on some and left others plain and alternated them on the serving tray. Ironically, one other guest made the "Christmas snickerdoodles" and people ate them up. My husband and kids loved them..."

Raspberry-Lemonade Cake

I am not a fan of fruit flavored cakes and my husband just doesn't like cake. We all loved this cake! I have three notes to share..first; spoon, don't pour the liquid over the cake, when I poured, the liquid pooled in the center of the cake and absorbed immediately. The second note is from Metal Momma: use the back of a wooden spoon to poke larger holes in the cake. I think that is what they did in the picture. The third is to go ahead and use the whipped frosting and the whipped cream. It isn't too sweet, it is really creamy and is the perfect topping for this cake. Man, this cake is so good, I think I will go get a piece now!
