Slow Cooker Vegetable Minestrone I used Picante Clamato instead of tomato juice to give it a little kick. I didn't use pasta, I added a can of kidney beans, a can of cannellini beans, and a can of garbanzo beans instead. I'm thinking of trying Italian seasoning next time instead of the basil and oregano measurements. This recipe is perfect for making overnight and taking a thermos of it to work on a cold rainy day.
