Cheesy Chicken Enchilada Soup We eat out often & I find I have cans in my cabinet for years. I did some cleaning out & decided I needed to use up some enchilada sauce. I really was not in the mood to make enchiladas (too much work). I was so happy to find this recipe. I've never had anything like it, but loved it!! I really like enchilada sauce & would almost drink it from the can. It was really fun to have it in a soup. I can't wait to make this & have my family try it...it's so easy too! I used regular cheddar cheese & worked fine. I also could not find southwestern seasoned chicken (so I used frozen, chicken breast already cooked & microwaved it for 2 minutes & used that)- very easy. I did use the condensed 98% fat-free cream of chicken soup with 30% less sodium (like the recipe calls for) I was hesitant, because I usually don't like the healthier choices....I LOVED IT!! I don't think I could get sick of it even if I ate it every day!
